This is a fall staple in my house. As you can tell from the photo, it's an oldie. When I asked my mom where she got this recipe she said "from someone in school". I'm not going to tell you how old my mom is but she hasn't been "in school" in a long, long time. The pumpkin at the bottom of the recipe is everything.

You Need

  • 3 1/2 cups flour
  • 2 tsp baking soda
  • 1 1/2 tsp salt
  • 1-2 tsp cinnamon
  • 1/2 - 1 tsp nutmeg
  • 3 cups sugar
  • 3/4 - 1 cup vegetable oil
  • 4 eggs
  • 2/3 cup water
  • 2 cups (1-15oz can) pumpkin
  • 1 tsp vanilla
  • How To

    1. Preheat oven to 350°.
    2. Mix pumpkin, water, oil and eggs together.
    3. Pour into dry mixture and mix just till moist.
    4. Pour into two greased medium loaf pans. Bake for 1¼ hr - 1½ hr or until toothpick inserted in the center comes out dry.
    5. Cool before removing from pans. When cooled, dust with confectioners sugar. Can add nuts or cranberries to mix or glaze when cool.
