great winter soup
You Need
How To
- heat olive oil over medium heat
- stir in the carrots, garlic, celery and onion and cook, stirring frequently, until the vegetables are soft and lightly golden (5 to 7 minutes)
- stir in paprika, cumin, salt, pepper and lentils and cook, stirring frequently for approx. 30sec
- stir in 6 cups of chicken broth and 2 cups of water
- stir in 1 cup grated parmesean and 8oz tomato sauce
- reduce heat to low, mostly cover (leaving a little gap) and cook for 1hr
- check and stir periodically (15min increments) and add water as needed
