A vibrant green chili sauce, a Middle Eastern version of Salsa Verde. Perfect for sandwiches, protein dishes, and spooned over cheese. Contains herbs and spices with a fresh, hot, and tangy taste.

You Need

  • 2 garlic cloves or 3 cloves confit garlic
  • 1-2 green chilies
  • 1 large bunch of coriander, stems and leaves
  • A good pinch of salt
  • 1 tsp Hawaij or 1 tsp toasted and ground cumin seeds
  • Juice of 2 limes
  • 250ml olive oil
  • How To

    1. Roughly chop the garlic and chilis and place them in a food processor. Blend until well combined.
    2. Add the coriander leaves and stalks and pulse until blended but still vibrant in color and retaining some texture. Do not create a puree.
    3. Add the salt, Hawaij, lime juice, and 3/4 of the olive oil. Blend in pulses to maintain texture.
    4. Taste for seasoning and pour into a clean jar with a tight fitting lid. Add the remaining oil over the top to preserve it.
