What makes this the ultimate grilled cheese? There's just enough cheese to ooze out, but not too much that it burns your mouth, or cannot be dipped into a bowl of soup. And the parmesan crust just is the added bonus. I always go for a sourdough because the diner version doesn't float my boat but you can choose your own adventure here.

You Need

Serves 1
  • 2 slices sourdough or wholemeal bread sliced 1cm thick
  • 50g grated mature cheddar or cheese of your choice
  • Butter to spread onto both sides of each slice of bread
  • 20g parmesan, finely grated
  • How To

    1. Butter both sides of bread.
    2. Sprinkle grated cheddar on one side of bread and close the sandwich with the second slice.
    3. Grate the parmesan on to both outside pieces of buttered bread and gently press down.
    4. Heat a cast iron or heavy bottomed frying pan on medium heat. You do not want it to be too hot as it will burn the outside of the bread before the cheese can melt.
    5. Place the sandwich in the centre of the pan on medium heat, and press down with a spatula or a weight.
    6. Cook for 3-4 minutes and then flip and repeat on the other side until the outside is golden and crunchy and the cheese has fully melted.
    7. Keep warm in the preheated oven if you are making batches of these.
