A simple and delicious pumpkin bread using whole food ingredients (*always choose organic ingredients when possible*)

You Need

  • 1.5 cups whole wheat pastry flour
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1 cup canned pumpkin puree (or roast and puree your own)
  • 1/2 cup almond milk
  • 1/2 cup coconut sugar
  • 1/4 cup avocado oil
  • 2 vegan eggs (mix 2 tablespoons ground flaxseed with 6 tablespoons of warm water and let sit for ~5 mins until thick), or you can use 2 eggs
  • 1 teaspoon vanilla extract
  • How To

    1. Preheat oven to 350°F, lightly grease 8x4" baking pan with avocado oil or butter
    2. In a mixing bowl, whisk together flour, ground cinnamon, ground nutmeg, ground clove, baking powder, baking soda and salt
    3. In another large bowl, mix together pumpkin puree, almond milk, coconut sugar, oil, vegan eggs (or eggs) and vanilla
    4. Add the dry ingredients to the wet, stir just until combined
    5. Gently pour batter into the lightly greased pan and bake for 40-50 mins (or until a toothpick comes out clean)
    6. Enjoy!!
