a riff on my world-famous* banana bread dreamt up when I was feelin a lil feisty. *my friends tell me it's good

You Need

  • 1 stick (8 Tbs) butter
  • 1 cup sugar
  • 2 eggs
  • 2 ripe bananas
  • 2 cups all purpose flour
  • 1 tsp vanilla extract
  • 1 Tbs milk or non-dairy alternative
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/8 cup tahini
  • 1/8 cup chocolate spread nutella or other
  • 1 Tbs cocoa powder
  • How To

    1. Pre-heat oven to 325°F. Line a 9" cake pan with parchment paper on the bottom.
    2. In a large bowl, cream the butter an sugar together until light and fluffy.
    3. Add the eggs to the bowl one at a time, mixing well between each egg.
    4. In a separate small bowl, mash the bananas. Mix in the vanilla, milk, and cinnamon. Add the contents of this bowl to the egg mixture and stir well.
    5. In a small bowl, combine the dry ingredients.
    6. Slowly mix the dry ingredients into the wet bowl, being cautious to not over-mix.
    7. Separate the mix in half. Add the tahini to one half and the chocolate spread and cocoa powder to the other.
    8. Add the two mixes into the prepared cake pan, alternating between the two. I like to use a 1/4 cup to scoop the batter and place into the pan. Using a knife or spoon, give the cake a nice swirl on top.
    9. Bake cake for 50 minutes or until a toothpick comes out clean when inserted.
