How To
- Peel and grate the potatoes, then soak them in cold water to prevent oxidation and keep them fresh
- Grate onion
- Drain the potatoes and wrap them in a towel or cheesecloth. Squeeze out all the excess liquid
- Place the potatoes in a bowl and add the grated onion
- Add 1 egg, flour, garlic powder, salt and pepper and mix
- In a Dutch oven or cast iron pan, add enough vegetable oil to fully coat the bottom. Heat the oil over medium heat
- Once the oil is hot, add dollops of the potato mixture to the pan and gently flatten them with a spatula
- When the edges turn golden brown, flip the latkes to cook the other side
- Place on a wire rack when done and salt the tops to finish
- Serve with a dollop of sour cream, smoked salmon and dill to garnish
