Didn't have anything to serve with this, so turned it into a marinated white bean + olive dish that came out pretty nice.

You Need

2-4 servings
  • 1 cup Castelvetrano olives, torn in half
  • 1 15.5 oz can Cannellini beans, rinsed well
  • 1/4 cup extra-virgin olive oil + 1 Tbsp for beans
  • 1 tsp lemon zest
  • 1 Tbsp fresh lemon juice
  • 1 garlic clove, grated
  • 1 tsp chili flakes
  • Salt + cracked pepper to taste
  • How To

    1. Heat a pan on low, add 1 Tbsp olive oil once hot
    2. Add Cannellini beans to pan, and saute for 2-3 minutes until heated through
    3. Take off heat and let cool
    4. While cooling, tear olives in half and add lemon zest, lemon juice, chili flakes and grated garlic
    5. Add white beans, and stir well
    6. Salt and pepper to taste (be careful with salt!)
    7. Cover and marinate in the fridge for at least 30 minutes before serving
